Yeast pizza dough delicious

  • Don't you have a rolling pin? A worthy replacement on the farm can always be found! Take any glass bottle with a flat surface, remove the labels, wipe and you're done! A plastic bottle will do. But it must be filled with water and screw the lid well so that the water does not drip.

Personally, I used a piece of plastic pipe. I had several of them, of various diameters. Very convenient, no rolling pin needed.

Use a sleeve from cling film or from a roll of foil. Only it needs to be wrapped with the same film or wide tape, if it is made of cardboard.

  • The correct dough will be obtained only if the correct proportions of the addition of ingredients are observed. No need to add them “by eye”. The result may not satisfy you.
  • The longer the dough “rests”, the softer it becomes. This must be considered if you are preparing it well before use. In this case, you need to pour more flour or sprinkle it abundantly on the table surface when rolling.
  • In order to get pizza on a thin basis, the dough must be rolled out as thin as possible, ideally 1-2 mm. If you like pizza on a fluffy basis more, you need to roll the dough a little thicker - 3-5 mm, as a result, when baking, it will increase in volume by 1.5-2 times.
  • Today, when baking, we much more often use dry, quick-breeding yeast, because they are much faster to approach, well and stored for a long time. But sometimes there are recipes with pressed yeast (they were once called sticks). Replacement is 1 to 3. That is, the pressed 3 part is replaced with one part dry.
  • Try to cover with the sauce - the whole dough is the basis, then it will not be too dry around the edges.

Classic pizza dough

Those who cook the dough for the first time will be surprised how simple it is, starting with the composition of the ingredients, right up to the cooking process.


  • flour - 2, 5 tbsp.,
  • water - 1 tbsp.,
  • salt,
  • olive oil - 3 tbsp. l
  • dry yeast - 1, 5 tsp.


  • To get a delicious home-made pizza dough, mix in one container water, heated to a slightly warm state, with salt and yeast.
  • When the ingredients dissolve, you can begin to knead the yeast dough, plastic and light, like fluff. To start the process, we sift the flour onto a work surface and collect it with a slide.
  • We make a hole in the slide and pour water with yeast, while mixing all the ingredients.
  • Add olive oil, continue mixing, using a wide knife.
  • When the whole mass has become more or less homogeneous, we knead manually.
  • Having received a smooth plastic dough, put it in a container and close the lid. We put the dough in a warm place for half an hour.
  • Then we roll it into a very thin layer.

Italian pizza dough

When preparing pizza in Italian, it is important to remember that the ratio of water to flour in volume should always be 1: 3, slightly less than 3. This is the main secret of a successful Italian pizza dough.


  • flour - 1, 5 tbsp.,
  • water - 1/2 tbsp.,
  • live yeast - 10 g,
  • olive oil - 1 tbsp. l
  • salt,
  • sugar is a small pinch.


  • For kneading a yeast pliable dough for homemade Italian pizza, put the yeast and salt in a bowl, add sugar.
  • Add water and olive oil to the yeast to make the pizza delicious.
  • Add the sifted flour in portions and mix everything.
  • We knead the dough on the working surface of the table, sprinkled with flour.
  • We spread the kneaded dough into a container in which the process began and cover with a film.
  • As soon as the dough begins to rise, it can immediately be used to make pizza. Dough for a real Italian pizza should not stand for a long time.

Dough on the water

  • a pound of flour of good quality, better than baking,
  • a glass (200 gr.) of water,
  • 5 tbsp. l better than olive oil, but can be replaced with vegetable oil,
  • 1 tsp salt without top
  • I usually add Provence herbs to this dough, but you can do without it,
  • soda on the tip of a knife, put out with vinegar.

In the sifted flour (not all) put salt, seasonings and pour oil. Shuffle. Add water gradually, mixing well.

When you have poured out all the water, add the remaining flour and knead the dough well so that it does not stick to your hands.

Recently, I use a bread machine to knead all kinds of dough, because I don’t really like this process. And here you just load all the necessary ingredients, and after half an hour you get a ready-made dough of the desired consistency! But if you don’t have a bread machine, you have to work with your hands.

Put the finished dough in a plastic bag and send in the refrigerator for half an hour.

Take out the rested dough, remember it with your hands a little and roll it out, sprinkling it with a little flour.

Before putting the filling, place the dough on parchment paper and prick it with a fork over the entire surface. Sprinkle with oil and put in the oven at 200–220 degrees for 5 minutes. Remove from the oven and spread with sauce. So let it stand for about 10 minutes. After that, you can put the filling. Bake such a dough should be no more than 10 minutes.

Pizza dough as in a pizzeria

If you are a passionate fan of this cheese baking, then you can cook the dough in a slightly larger amount, divide into portions and put in the freezer.


  • flour - 500 g
  • water - 1 tbsp.,
  • egg,
  • butter - 50 g,
  • dry yeast - 5 g,
  • sugar - 1 tbsp. l
  • salt is a pinch.


  • Starting to prepare a delicious pizza by mixing all the dry ingredients in a spacious container and kneading yeast dough. We do not completely pour out the flour, leaving the fourth part for adjustment at the end of the batch, according to the advice indicated in the recipe.
  • Add melted butter to the dry mixture, slightly cooling it. Also, at the same time as butter, add the egg, placed lightly in a separate container.
  • We mix all the ingredients and add warm water, knead the lush homogeneous dough. Let the dough stand for an hour and divide it into portions.
  • We roll it into a thin layer and sprinkle with the filling.

Milk dough

  • 4 cups flour
  • 4 eggs,
  • 1 cup milk
  • 1 tbsp. l olive or vegetable oil,
  • 0.5 teaspoon of salt
  • baking powder or soda, slaked with vinegar (on the tip of a knife).

Put sifted flour and salt in a suitable deep container. Shuffle.

In another bowl, beat the eggs with a whisk and then pour warm milk (about 30 degrees) into it, add olive oil and mix well.

Pour the contents gradually into the flour, stirring constantly. Knead until the dough is elastic and stops sticking to your hands.

Roll the finished dough into a ball, sprinkle with flour or cover with a napkin to prevent it from blowing. Leave it warm for 20 to 30 minutes.

Milk Pizza Dough

More rich and satisfying pizza dough can be prepared with milk.


  • milk - 200 ml
  • flour - 450 g
  • eggs - 2 pcs.,
  • vegetable oil - 3 tbsp. l
  • dry yeast - 5 g,
  • sugar - 1 tsp,
  • salt is a pinch.


  • Delicious homemade pizza is obtained from a plastic yeast dough prepared in milk. To prepare it, slightly heat it and add yeast, salt and sugar. We leave milk with the ingredients until they are completely dissolved.
  • After 5 - 10 minutes, add the third part of the flour to the mixture, stir everything thoroughly and leave the dough to come up. The fermentation process will take from 30 to 40 minutes.
  • As soon as the dough increases in volume, add the eggs, previously lightly mixed and the butter, stir.
  • Adding flour, we knead the dough directly in a bowl. Cover the dough with a thick towel and leave to rise.
  • Do not forget to make two shortcuts of dough before using it to make pizza.

Kefir dough

  • 2 cups of flour,
  • 1 cup of kefir, you can and not quite fresh,
  • 2 eggs,
  • 3 tbsp. tablespoons of vegetable oil,
  • half a teaspoon of salt,
  • 1/4 teaspoon of soda (in kefir, extinguish soda with vinegar is not necessary).

Pour half the flour and all the salt into a suitable dish. Get in the way.

Pour kefir into another dish, add soda to it. Kefir from this should foam. Gently pour it into flour, add eggs, butter and mix it all with a whisk if there is no combine or bread machine.

Kneading the dough, gradually knead all the flour.

Roll the finished dough into a ball, sprinkle with flour or cover with a napkin to prevent it from blowing. Leave it warm for 20 to 30 minutes.

Pizza dough with mayonnaise

A very tender dough for a delicious yeast pizza can be prepared with mayonnaise.


  • flour - 500 g
  • mayonnaise - 150 g
  • milk - 1 tbsp.,
  • dry yeast - 8 g,
  • sugar - 1 tsp,
  • salt is a small pinch.


  • Pour yeast, salt and sugar into the warmed milk, leave, giving them time to ensure that all the ingredients are well dissolved in the milk.
  • After 10 - 15 minutes, pour the yeast milk into a container in which we will knead the dough. Add the cooked mayonnaise to the milk and stir everything thoroughly.
  • Sift the flour directly into the container with the ingredients for the dough, start the batch.
  • When the dough is no longer so sticky to your hands, put it on the table, sprinkling it with flour. We complete the kneading process, cover a homogeneous plastic dough with cling film.
  • After an hour, crush the dough and close it with a film. After the dough rises a second or third time (this will happen much earlier than the first time), the dough can be used to make pizza.

Sour cream dough

  • 2 cups of flour,
  • 2 eggs,
  • a glass of not very oily sour cream,
  • 2 tbsp. tablespoons of melted and chilled butter,
  • 1 tbsp. l sugar without top
  • 1 tsp salt without top
  • baking powder or soda, slaked with vinegar (on the tip of a knife).

Sift the flour onto a suitable dough kneading surface and make a recess in it. In any bowl, mix sour cream, salt, sugar, eggs and soda.

Beat softened butter in a separate bowl until the color changes, gradually add it to the sour cream mixture. Mix everything well until smooth and pour into the well of the cooked flour. Knead the dough as described in the recipes above.

The right pizza dough

Preparing yeast dough for pizza without missing any of the little things is not easy, if you succeed, you will definitely be satisfied with the result.


  • flour - 4 tbsp.,
  • margarine - 80 g
  • milk - 170 ml
  • eggs - 2 pcs.,
  • sugar - 2 tbsp. l
  • salt - 1 tsp.

For dough:

  • water - 50 ml
  • dry yeast - 1 tsp with a slide,
  • sugar - a pinch.


  • To prepare a very delicious butter pizza, prepare yeast dough. We mix warm water with yeast and sugar, leave to rise, according to a step-by-step recipe with a photo.
  • Eggs, be sure to beat at room temperature with sugar in a homogeneous mass, add salt, stir.
  • Sift the flour into a spacious container, add the suitable yeast, beaten eggs and milk, warmed to a warm state.
  • Mix everything thoroughly, add margarine, pre-melted and cooled.
  • We continue kneading the dough already on the working surface of the table. Kneading the dough thoroughly, put it in the prepared container and cover it.
  • After 1, 5 hours, remove the film, pour 1 tablespoon of vegetable oil into the palm of your hand and pour the dough on it.
  • We take the dough to the work surface without flour and make a small batch. When all the butter has been absorbed into the dough, it can be used to make pizza.

Quick pizza dough in a pan on sour cream and mayonnaise

  • 2 eggs,
  • 4 tbsp. spoons of sour cream
  • 4 tbsp. tablespoons of mayonnaise
  • 9 tbsp. tablespoons of flour with a small slide,
  • half a teaspoon of salt.

Break eggs into tall and wide dishes. Add sour cream and mayonnaise there. Stir with a whisk.

Add pre-sifted flour. Knead everything carefully so that there are no lumps. The dough is made so liquid that it can simply be poured into a skillet. In this case, the pan should be generously greased with vegetable oil.

Directly in a frying pan, grease the dough with ketchup, it is very convenient to do this with a silicone brush, and spread the cooked filling. We put the pan on the slowest fire, be sure to tightly close the lid. Fry for about 10 minutes. until the cheese is completely melted.

Pizza dough with sour cream

Yeast pizza dough will become even more magnificent and tender, if you add sour cream to the dough.


  • flour - 650 g
  • sour cream - 125 g,
  • butter - 70 g,
  • milk - 125 g
  • sugar - 70 g
  • vanilla sugar - a bag,
  • eggs - 3 pcs.,
  • pressed yeast - 20 g,
  • salt.


  • We mix warm milk with yeast and sugar, stir everything until the yeast and sugar dissolve, leave in a warm place.
  • In one container we mix eggs, sour cream, sugar and vanilla sugar, whisk everything with a whisk until smooth.
  • Pour yeast with milk into the resulting homogeneous mass and portionwise add flour sifted previously, knead the dough.
  • We close the lump of the dough laid out in the container, cover it and leave it for 10 - 15 minutes.
  • Add salt and butter, softened, but not melted, on top of the dough.
  • All thoroughly knead, cover with cling film and leave for an hour.
  • We spread the dough on the work surface, sprinkled with flour, with our hands we form a rectangle from the lush dough that came up. We turn it three times, then three times again.
  • Cover the resulting structure with a bowl and wait 20 minutes, then repeat the procedure again.
  • Now, from a small amount of the resulting dough, you can roll out a thin layer for pizza.

Kefir pizza dough

  • flour, about 500 gr.,
  • a glass of kefir,
  • 2 tbsp. tablespoons of vegetable oil,
  • 0.5 tsp soda
  • a teaspoon of salt without top,
  • a little less sugar.

Pour sifted flour, salt, sugar, soda into a bowl. Mix. Add kefir. Mix thoroughly and add oil. The dough should turn out like dumplings.

Next, knead the dough well with your hands. Divide into two parts. One can be frozen until next time. And the other part we give rest for about 20 minutes.

After 20 minutes, thinly roll the dough along the diameter of the pan. We put in a cold, dry frying pan and put on medium heat. When the bottom of the dough is sufficiently browned, turn it over and lay out the filling.

This dough is very thin.

Kefir pizza dough

You can get incredibly airy and light yeast dough by kneading it on kefir.


  • flour - 3 tbsp.,
  • vegetable oil - 100 ml,
  • kefir - 1 tbsp.,
  • dry yeast - 1 sachet,
  • sugar - 1 tbsp. l
  • salt.


  • We prepare yeast dough, airy, like fluff for a very tasty and fragrant pizza. Why mix kefir with vegetable oil, salt and sugar in one container, according to the recipe.
  • The mixture of ingredients is heated to a slightly warm state in a water bath or in the microwave.
  • Thoroughly mix the flour with yeast, add kefir and butter to the dry mixture. If possible, then knead the dough in a special kitchen appliance for kneading the dough.
  • Or knead manually in the traditional way. We cover the dough, laid in a container with cling film and leave for half an hour.
  • The dough can be used to make delicious and delicate pizza.

Puff pastry for pizza

Pizza from such a test literally melts in your mouth; it simply does not happen to be more magnificent and tender.


  • flour - 600 g
  • water - 85 ml
  • dry yeast - 7 g (fresh 20 g),
  • butter - 200 g,
  • milk - 130 g
  • egg,
  • sugar - 3 tsp
  • salt.


  • We brew yeast in warm water with sugar, leave for 15 minutes in a warm place.
  • Beat the egg in a separate bowl with a whisk along with warm milk. Add the dough, knead everything thoroughly.
  • Sift the flour onto the table and add salt and sugar, mix everything lightly with your hand.
  • Put the chilled butter into the flour. We chop everything with a knife and rub it with our hands, make a recess.
  • Pour the yeast dough blank in three steps into the recess. After each serving of the liquid mixture, briefly mix it with flour.
  • We do not knead the dough for a delicious home-made pizza for a long time, we collect it in a lump. We cover the yeast dough with cling film and send in the refrigerator for 2 hours.

Real Italian pizza has many of its subtleties and cooking secrets; its taste is undoubtedly recognized throughout the world. However, some deviations from the strict canons of classic Italian pizza in the preparation of your home-made version of pizza are quite acceptable. Home-made pizza is more rich and satisfying no worse than Italian. So we will continue to approach the process creatively, to the delight of ourselves and loved ones.

Quick pizza dough on the water

  • 7 gr. (2 tsp. Without top) dry instant yeast,
  • a glass of warm water (about 45 degrees),
  • teaspoon of sugar (if you like dough better then add 2)
  • 0.5 - 1 tsp salt
  • 350 gr (2.5 cups) plain flour,
  • 2 tbsp. l vegetable oil.

Activate yeast. To do this, fill them with warm water, sprinkle sugar and let stand until they rise. This is approximately 10 minutes.

Water should be slightly warm. Nothing hot, otherwise the yeast will lose its fermentation power!

When the yeast dough is ready, add sifted flour and salt and vegetable oil.

Salt makes yeast fermentation difficult, so pour it not into yeast, but mix with flour.

Mix everything thoroughly. Put the dough on the table, previously dusted with flour, and knead until it becomes uniform, soft and elastic. Roll the finished dough into a ball, sprinkle flour on top or cover with a napkin to prevent it from blowing. Leave on 20-30 minutes.

Ready yeast dough can be stored in the refrigerator for up to 1 week or frozen in the freezer for up to 3-4 months. It is almost ready for baking, you just need to defrost it.

Milk Pizza Yeast Dough

  • a glass of milk,
  • 2 eggs,
  • a pound of flour,
  • bag of dry yeast
  • tsp Sahara,
  • half a teaspoon of salt,
  • vegetable or olive oil - 2 tbsp. spoons.

Activate yeast. To do this, fill them with warm milk, pour sugar and let stand until they rise. This is approximately 10 minutes.

Next, proceed as described in the previous recipe.

Dough with tomato paste or ketchup

• 20 gr. tomato paste or any ketchup,

• 300 grams of water or milk,

• 20 grams of olive or vegetable oil,

• 500 grams of flour.

Mix sifted flour thoroughly with yeast.

Add warm water to the tomato paste or ketchup. Rub well so that no lumps form.

Add salt and sugar to tomato water, stir until dissolved.

Pour in the oil and mix the flour with yeast a little. Knead the dough. Divide into two parts. We lay out in packages. One part can be frozen until next time. Another - just leave in the refrigerator for about 30 minutes.

Garlic Pizza Yeast Dough

• 175 grams of warm water or milk,

• 280 grams of flour,

• 3 to 5 cloves of garlic,

• 7 grams (sachet) of dry yeast.

For chopping garlic, it is better to use a blender, but the press is suitable if there is no blender.

In warm water or in milk, stir salt, sugar, butter. Add the chopped garlic.

Sift the flour and mix with dry yeast. Water with all the ingredients dissolved in it is gradually poured into flour, stirring well.

Knead the dough. Divide into several parts depending on the diameter of the pizza. We put the necessary ball in the refrigerator for half an hour. The rest - freeze until next time.
