First we’ll make a chicken marinade using the Velveting meat technique. In the chicken recipe in orange sauce, I already used this method and I liked it for its simplicity and effectiveness. Protein very quickly and reliably locks every piece of meat and thus the meat juice remains inside, which otherwise would surely leave the meat and the chicken would turn out to be dry.

Separate the yolk from the protein. We don’t need the yolk, put it in the refrigerator. Beat the protein lightly with a whisk or fork to remove clots and obtain a uniform protein.

Add to the protein 1 tbsp. a spoonful of starch, 1/2 tbsp. tablespoons of apple cider vinegar and 1/2 tsp of salt and mix thoroughly. The marinade is ready.

Cut the chicken into medium-sized cubes.

Add the chicken fillet to the marinade and mix so that all the pieces of chicken are coated with the marinade. We close the bowl with a lid or foil and put it in the refrigerator for at least half an hour, and preferably for 1 or 2 hours. So the chicken will be even more tender.

So, the chicken has been in the refrigerator for a sufficient amount of time, we take it out so that it warms up before frying. We continue to cook velvet chicken in Chinese. To do this, we prepare all the necessary ingredients.

Cooking the sauce. Mix soy sauce with one teaspoon of starch and mix until the starch is completely dissolved. Add 50g of honey and 1 tbsp. a spoonful of balsamic vinegar, mix. If the honey is not liquid, then heat it in the microwave or in a water bath until the honey turns into a liquid state. If desired, ground black pepper can be added to the sauce.

Peel and finely chop the onion and garlic.

According to the classics, the chicken, which is cooked using the Velveting technique, is thrown into boiling water for a minute or two, and then cooked in a pan. But we will immediately use the pan, so a little faster and we will not dirty the pan.

So, we strongly heat a large frying pan (I have a bottom diameter of 26 cm) with a small amount of vegetable oil. Stir the chicken in a bowl with marinade, put everything in a pan and fry for 2 minutes at maximum heat, stirring constantly. All pieces should have time to turn white, that is, close so that the juice remains inside. We spread the chicken in a plate - we release the pan.

Again, heat the pan with vegetable oil. Spread onion and fry at maximum power for 1 minute, stirring constantly. Add garlic and fry for another 3 minutes, stirring often.

Pour the sauce into the pan and when it boils add chicken, mix and fry for 2 minutes on an average stove power. Due to the starch in the sauce, it thickens and becomes pleasant in consistency.

  • Fresh ginger root
  • a tablespoon of soy sauce,
  • unrefined peanut butter - 2 tsp.,
  • garlic - 4 cloves,
  • chili pepper - 3-4 pcs.,
  • a bunch of cilantro (for an amateur),
  • ground black pepper
  • salt.

The chicken is washed, dried with paper towels, cut lengthwise into two parts. In a large container, which is suitable for steaming, halves of the carcass are laid out, thinly sliced ​​ginger spills out from above. During boiling (about 40 minutes) and as necessary, water is added to the container.

The carcass halves are taken out, half of the glass is cast from the broth remaining after cooking. The remaining liquid is not needed, so it can be safely poured. The remains of the ginger root must be removed.

Advice! “It is better to put the chicken on a heated dish and cover it with foil. Such a step is needed to maintain heat while the sauce is being prepared for watering. ”

It is cooked in a certain sequence. Chili pepper finely chopped, the same action is repeated with garlic and cilantro leaves. Peanut butter is poured into a small frying pan, which is heated until smoke appears. The pan is first removed from the heat, chili and garlic are sent to it, everything is thoroughly mixed. Then she returns to the fire and after 15 seconds cilantro is poured into it. With thorough stirring, chopped leaves are prepared for no longer than 20 seconds, after which the broth and soy sauce are poured. Salt and pepper are added to taste.

Chicken in batter

For one serving, you need to take:

  • chicken breast - 300 g,
  • one egg,
  • bell pepper - 2 pcs.,
  • a jar of pineapples (you will need juice and a couple of rings),
  • soy sauce - 3 tbsp. l.,
  • ketchup - 1 tbsp. l.,
  • vinegar - a quarter cup
  • sugar - 3 tbsp. l.,
  • starch - 2 tbsp. l.,
  • flour,
  • water,
  • salt and pepper.

The first step is marinating chicken in soy sauce. You can knead the batter, as well as water it while the meat is pickled.
